eisbein, translated from the native german language, literally means ice leg...seriously! i kid you not! and according to wiki....this 'ice leg' is actually 'heavily marbled meat covered with a thick layer of crispy fat, or "crackling". the meat is tender and aromatic, but must be cooked or braised for a long time.'
i have to admit, i actually wasn't in for dinner when pak law whipped this dish up, but after getting many 8 upon 10 raves from the regulars of one six b, pak law decided to save some for this girl to try and hopefully make it to 'blog-worthy' status! *grin* and yes, i am happy to say it is definitely blog worthy! based on the wiki definition, pak law's version of the esbein fit it to a snug t! the meat was marbled just right, (yes thick layer of fat and all!) and braised till truly tender and very very aromatic. i was a little afraid that the meat would be a little dry, with each piece literally the size of a pig's leg! but i was wrong....the meat was extremely tender, very moist and infused with the flavours of the stock. coupled with the sweet potato mash, i easily polished up one full leg!
as with all meals at one six b, it would not have been complete without auntie ta's dessert so when i got back that evening, i was happy to know that they did save some for me and i was wow-ed when i heard what the dessert was. profiteroles! yup....you read right! everything was hand made from scratch...the pastry, the cream filling, even the chocolate syrup! so definite hats off to auntie ta for dishing up such a light yet awesome melt in your mouth dessert.
my only regret with this post is that the piccies don't do the eisbein and profiteroles the justice they deserve...so fingers crossed that pak law and auntie ta attempt the eisbein and profiteroles once again soon....this girl will definitely make sure she'll be around for first hand piccies!
