last weekend was indeed special with my mom taking charge of the kitchen for a change. it has been two years since she spoiled us all with her kick ass homemade otak otak and nasi lemak...and this time around, be very popular demand, she decided to treat us all again!
we all remember the yummy lemak otak otak from before and couldn't wait for dinner. mom was working since five that morning, mincing and mixing the mackeral specially ordered from the family's fishmonger. no other otak can beat this homemade one, just because of the amount of fresh ingredients that go into it. generous amounts of fresh fish, sotong, prawns and homemade sambal make the otak like none other. just the right hint of spice and coconut, barbequed by pak law till moist, we managed to clear out all that was prepared (and mind you there was a lot of otak!).
on top of the otak, mom prepared the rice from scratch (so no overly oily rice, just fluffly and fragrant!), fried her own peanuts and ikan bilis (with sugar which i love), and stewed up a fiery hot sambal udang. the sambal udang was so good that we managed to finish the huge bowl you see in the piccies just between the six of us! the chicken wings were bought from punggol nasi lemak because we decided not to stress mom out with another request for her tumeric chicken wings. but it was all good. from start to finish, it was an awesome dinner. pity aunti ta and uncle paul couldn't join us that evening...but i'm sure mom will be cooking up a storm in the kitchen pretty soon!
